This course draws on principles of anatomy, physiology, and biochemistry to deepen students’ understanding of macro- and micronutrients, digestion, and metabolism in preparation for applied discussions on individual- and policy-level tools to support healthy eating, dietary patterns for chronic disease prevention, and global nutrition challenges.
